Mumbai Style Egg Bhurji

Mumbai Style Egg Bhurji is scrambled egg with different spice blends. It is quite popular and served along with Pav / Bread Toast across streets of Mumbai.

Ingredients

  • 4 no's Eggs
  • 1 cup Onions, chopped
  • ¼ cup Capsicum , Chopped
  • Cup Tomato ,Chopped
  • 1 teaspoon Ginger ,grated
  • 1 teaspoon Garlic, grated
  • 1 no Green Chilly ,chopped
  • ½ teaspoon Cumin Seeds`
  • teaspoon Turmeric Powder
  • ½ teaspoon Red Chilly Powder
  • ½ teaspoon Coriander Powder
  • ¼ teaspoon Garam masala powder , refer notes
  • ½ - 1 Tsp Pav Bhaji Masala , refer notes
  • ½ teaspoon Black Pepper powder
  • 2-3 tablespoon Cooking Oil
  • 1 - 1 ½ teaspoon Salt or as required
  • 1 teaspoon Mint Leaves ,chopped
  • 1 tablespoon Coriander Leaves ,chopped

Instructions

  • Heat oil in a pan , when it's hot enough ,add cumin seeds.
  • Once cumin seeds is about to change colour , add chopped ginger , garlic and green chillies.
  • Add chopped onions and saute well till it turns translucent.
  • Now add in finely chopped capsicum and saute for 3-4 minutes.
  • Add in chopped tomatoes and cook till it turns soft. To speed up the process of cooking tomatoes, add ½ teaspoon salt.
  • Add turmeric powder ,red chilli powder , coriander powder , garam masala or pav bhaji masala (refer notes) and mix well.
  • Break in 4- 5 eggs into the above cooked vegetables and gently mix .
  • Allow eggs to cook completely. Once its cooked ,scramble the eggs well to mix along with vegetables.
  • Now add ½ teaspoon of black pepper powder , ½ -¾ teaspoon of salt and mix well.
  • Garnish with mint and coriander leaves.
  • Serve it as a side dish along with Toasted Bread, Roti or Rice-Sambar.

Notes

  • Using Garam masala is optional , you can totally skip garam masala and use 1 teaspoon of pav bhaji masala. 
  • Or If you don't have pav bhaji masala , then use ½ teaspoon of Garam Masala .
