Heat oil in a pan , when it's hot enough ,add cumin seeds.
Once cumin seeds is about to change colour , add chopped ginger , garlic and green chillies.
Add chopped onions and saute well till it turns translucent.
Now add in finely chopped capsicum and saute for 3-4 minutes.
Add in chopped tomatoes and cook till it turns soft. To speed up the process of cooking tomatoes, add ½ teaspoon salt.
Add turmeric powder ,red chilli powder , coriander powder , garam masala or pav bhaji masala (refer notes) and mix well.
Break in 4- 5 eggs into the above cooked vegetables and gently mix .
Allow eggs to cook completely. Once its cooked ,scramble the eggs well to mix along with vegetables.
Now add ½ teaspoon of black pepper powder , ½ -¾ teaspoon of salt and mix well.
Garnish with mint and coriander leaves.
Serve it as a side dish along with Toasted Bread, Roti or Rice-Sambar.
