Into a bowl add 1 tablespoon flaxseed meal and 3 tablespoon of water ; whisk well together and set aside undisturbed for 15 minutes.
After 15 minutes , it looks thick and gelatinous , hence it’s called flax egg.
Into a mixing bowl , add butter , cane sugar , palm sugar . With a hand blender / electric blender , whisk until sugar and butter is well incorporated.
To this add peanut butter, vanilla essence, flax egg and continue to blend everything together till creamy.
Place a flour sifter above the mixing bowl ; add flour , baking powder , cooking soda, salt and sift everything together directly onto a mixing bowl.
With spatula, mix everything together to form a thick and stiff dough. Cover bowl with a cling film and refrigerate it for 30-60 minutes.
After 30 minutes , takeout the bowl from refrigerator and remove cling film.
Scoop 1 tablespoon of cookie dough and shape into balls and gently press to give a round shape. Arrange on a lined baking tray and make design or any impressions from fork .
Preheat oven to 180 deg Celsius ; place the baking tray inside the oven and bake for 16-18 minutes.
Once baked , cool the cookies on wired rack.
Let cookies cool down completely , store in a air tight snack jar.
Serve it as a snack or with hot cup of tea.
