In a non-stick pan, heat ¼ cup ghee/ clarified butter.
Keep on a low flame, add ½ cup of rajgira flour and roast till aromatic, approximately it may take 5 to 6 minutes. But depending on the freshness and quality of the flour, time may vary; plus or minus 2-3 minutes. In case if you can’t make out aromatic smell, then just roast until it looks like a dough.
Now add in luke warm milk and mix well briskly. Make sure that no lumps are formed. Don’t use hot milk here, you can only use boiled milk at room temperature or just luke warm. Adding hot milk may sometimes forms lumps in the flour.
When milk is completely absorbed. Add organic jaggery powder.
Mix well everything, when everything blends well and starts to come together, it reaches halwa consistency.
Add cardamom powder, dry ginger powder and nutmeg powder, mix well everything.
Turn off the stove , garnish with chopped nuts and serve hot or warm.
