Ingredients, Tips and Variations:
Chicken : Chicken breast is cut into strips, which is then cut into small bite size pieces. Though chicken breast works best to make nuggets , you can also use small bites of deboned chicken .
Buttermilk : Marinating chicken in buttermilk for few hours or overnight makes chicken pieces to stay moist and juicy. After marination is done, drain off buttermilk and remove chicken pieces. Let excess buttermilk drip off completely.
Season flour : Add good amount of spices to the flour mixture . Adding spices to the flour will give extra oomph to the chicken nuggets , without which nuggets may taste bland. Hence add all the spices to the flour.
Coating chicken pieces with seasoned flour is the best way to coat chicken nugget pieces because we get flavorful and amazing chicken nuggets both inside and outside.
Egg Wash : Dipping flour coated chicken bites in Egg ensures that coating sticks to chicken nugget pieces. If you are allergic to egg , alternative to egg wash you can dip chicken pieces in corn flour slurry for proper coating .
Panko Bread crumbs : Panko bread crumbs works best for outer coating. If you want extra crisp then mix some crushed cornflakes along with bread crumbs to get super crispy outer on homemade chicken nuggets.
Bake/ Deep Fry / Air Fry : You can achieve the same crispy outer texture and juicy inside by baking or deep frying chicken nuggets in oil or with air fryer. It's up to your choice, but if you are deep frying make sure to use any flavorless oil.

Step by step directions to make Chicken Nuggets
Whisk butter milk well with salt and pepper powder .
In a bowl add chicken and pour buttermilk, mix well.
Cover and marinate it in fridge for 2+ hours or overnight(8 -10 hours)
Then remove from fridge and drain off excess buttermilk.
Place all purpose flour on a bowl or plate. Add all spice powders to the flour.
Mix well everything. Set aside.
Crack open a egg into a separate bowl , add salt and pepper, whisk well and set aside.
In a wide bowl mix panko bread crumbs, oregano or thyme , paprika, pepper powder, and mix well. Salt is not added here as panko bread crumbs already contains salt in it.
Preheat Oven to 200 deg Celsius. Alternatively if you deep frying , In a wide pan heat oil for deep frying.
Add chicken bites into spice flour and coat it with flour,
then dip it in egg and
then coat with panko bread crumb mix. Repeat this to all the chicken pieces.
Line a baking tray and brush with oil. Arrange chicken pieces on a baking tray , spray oil or drizzle some oil on top of the arranged chicken pieces .
Put inside a oven and bake for around 18 minutes.
Around half the way after 10 minutes of baking , open tray from the oven. Turn the chicken pieces to other side, drizzle some oil on top.
Put it back in oven and continue to bake for 6 to 8 minutes.
Once done , garnish with some fresh herbs, sprinkle some kosher salt and serve hot with favorite sauce or dips of your choice.

Ingredients
- 250 grams Chicken breast - bite size
For Marination
- 500 ml Buttermilk
- 1 tablespoon Salt
- 1 tablespoon Black Pepper Powder
For Flour Mixture
- โ Cup All Purpose Flour
- 1 teaspoon Black Pepper Powder
- ยฝ teaspoon Onion Powder
- ยฝ teaspoon Garlic Powder
- ยฝ teaspoon Red Chili powder
- ยฝ teaspoon Smoked Paprika
- ยฝ teaspoon Salt
- ยผ teaspoon Baking Powder
For Egg Wash
- 1 Egg
- 2 tablespoon Milk - optional
- ยฝ teaspoon Salt and Pepper
For Bread Crumbs
- 1-ยพ Cup Bread Crumbs
- ยผ teaspoon Chili Powder
- ยผ teaspoon Black pepper powder
- ยผ teaspoon of Basil or Oregano or thyme - your choice
- Note * Bread Crumbs already has salt in it - so donโt add salt
- Few Drops of Oil to drizzle
