Onion Egg Bhurji is a simple, quick and delicious recipe , it's the Indian style scrambled egg with onions , herbs and spices.
Egg Bhurji or anda bhurji is the name given for Indian style scrambled egg which are more firm whem compared to runny scrambled eggs.
It takes less than 15 minutes and it's one of the most favourite recipe among Bachelors. Also this goes very well as starter with any drink .
About this recipe
To make a perfect onion egg bhurji , the main key is frying onions. Adding lots of finely chopped onions and frying till golden brown results in a tasty and delicious bhurji.
As I had lots and lots of requests for making a simple egg recipe that goes well as side dish , I opted to post this recipe.
Three main types of Egg Bhurji widely cooked across India are Vegetable based Bhurji , South Indian style masala Egg Bhurji and Basic onion egg bhurji.
Vegetable based Egg Bhurji's are tasty and nutritious , few of my favourites include Beans Egg Bhurji , Moringa Egg Bhurji , Mumbai Egg Bhurji and Beetroot Egg Bhurji .

How to make Onion Egg Bhurji
Heat 2-3 tablespoon of oil in a skillet / frying pan.
Add 2 cups of finely chopped onions and fry till raw smell vanishes.
Now add in chopped green chillies and saute well , till onions turns translucent.
Break in 3 eggs, mix and saute till eggs are well cooked .
Scramble egg well till it becomes small bits .
Add salt and freshly black pepper powder ,mix well everything.
Now add in freshly chopped coriander leaves ,mix well and serve hot.
Serve hot with phulka or serve as a starter/snack along with a drink.

Ingredients
- 3 no Whole Eggs
- 3 no's Onions , Medium size finely chopped
- 1 teaspoon Green Chillies , finely chopped
- 2-3 tablespoon Cooking Oil
- ¾ -1 teaspoon Salt or as required
- 1 teaspoon Black Pepper powder or as required
- 4 tablespoon Coriander Leaves , chopped
Instructions
