This is a vegan , gluten free and tasty dessert loaded with good fat . Its smooth and silky , melt in mouth dessert.

About this recipe
Ragi coconut milk pudding is a inspiration from a traditional dessert Halbai from Karnataka. Basically cereals like ragi , rice or wheat are soaked for few hours and blend along with coconut to extract milk . Later,milk is cooked until it reaches the desired thickens, sweetened with jaggery and flavoured with cardamom.

To set Halbai , It is spread on a grease plate and later cut into squares or rectangles. To be honest , here with this recipe , I have changed the name and presentation.
Recently , I was in a healthy food and styling event where I was making Ragi Halbai . But while presenting the dish somehow I was not happy with the final look . Hence , I instantly changed the name and look of the dish . As it got so much of appreciation and published in many media , I retained the same name and look of the dish.

Ingredients
To make this dessert , you just need basic and minimum ingredients , Yes, you just need 4 ingredients to make this delicious dessert.
Ragi / Finger Millet - This tiny millets are super grain and are very nutritios. Ragi as a earthen flavour. This dessert is basically a cereal and coconut extracted milk recipe. I have tried with whole wheat and rice grains to make this dessert. You can use finger millet or Whole wheat or rice to make this dessert. Other millets , I havent used,
Coconut - Extracted fresh coconut milk is recommended , as you can mix both cereals and coconut together to extract milk. However, you can use store brought coconut milk also but for sure it will alter the taste.
Jaggery - I always use organically sourced raw jaggery powder . If you don't have powdered jaggery , you can use block jaggery also. To use jaggery blocks, first soak jaggery in water ( use water just to immerse jaggery) for 30 -60 minutes . After that boil jaggery blocks along with water, when jaggery melts completely strain and use the syrup in the recipe.
Flavouring - Cardamom is the most basic flavouring done her.
Others - Coconut oil ( or ghee) , poppy seeds and pistaschios are used .
Tip
Cooking extracted milk on low heat and stirring continuously is the key to get silky smooth ,melt in mouth ragi coconut halbai.
No flours or any kind thickening agent are used here , it's only milk that thickens to give the structure the dessert . So you need to be cautious while making this , low heat and stirring is the key to get perfect pudding.

How to make Ragi Coconut Milk Pudding
Soak Ragi for 3+ hours.
Add soaked ragi, fresh coconut and ½ cup of water to any juicer mixer grinder and process.
Add water (up to 2 cups) part by part while processing ragi and coconut.
Use a muslin/ cheese cloth, strain and extract milk.
You get about 4- 4.5 cups of extracted milk.
In a thick pan, dry roast poppy seeds and set aside for later use.
Heat 1 tablespoon of coconut oil (alternatively you can use ghee). Pass milk through strainer and add extracted milk to pan.
On a low heat, keep stirring the milk continuously.
When milk turns warm, add organically sourced powdered jaggery and mix well.
Cook on low heat , continuously stir milk until it starts to thicken.
Add freshly pound cardamom powder , mix well.
Further stir until it reaches spoon dropping consistency. Turn off stove. transfer to a serving bowl.
Set in a serving bowl , garnish with roasted poppy seeds, coconut flakes and pistachios.
Let it set for 30 minutes before serving.
Tastes best when served chilled

- 250 grams Ragi / finger Millet soaked 3+ hours
- 1.5 cups of Fresh coconut pieces
- 2.5 to 3 Cups of water to process
- 1 tablespoon Coconut Oil - optional
- ¾ Cup Organic powdered Jaggery
