Spanish omelette is one of the popular dish from Spain. Traditional spanish omeletteIt is called as Tortilla Espanola and is served as a appetizer or a light dinner. Texture and thickness of this potato omelette varies from region to region .
I love to serve this Spanish Omelette in my breakfast just like Shakshuka , Mushroom Frittata , Savoury French Toast , Scrambled Peas Mushroom along with a bread toast.

Crispy , shallow fried golden potatoes are mixed with eggs and poured into an omeltte. It's thick and usually cut into wedges and served along with a drink. Its quite popular in cafe's.
Depending on the number of eggs and pan size , the thickness of the omelette varies. Also texture depends varingly in th way potatoes are sliced and cooked.
Make sure to slice potataoes evenly and cook it completely before mixing with eggs.
This recipe need no special equipments , just a frying pan and spatula is enough to make this omelette.

You just need minimum imgredients to put up this spanish omelette.
Potatoes - less starchy potatoes works well here.
Onion - White or red onions, anything works fine. Though white onions are traditionally used , I have used red onions as it is readily available with me.
Chillies and Cilantro are optional add on's . But I love omelette with these 2 ingredients eveytime. Heat from chillies add lot of taste in this omelette.
Eggs - brown or white any eggs works fine here.
Olive Oil - I have used olive oil here as traditionally , spanish omelette is made with it. You can use any vegetable oil to make this dish.
Seasonings- Salt and pepper powder
Top Tip
Slice potatoes into 3-4mm uniform thickness , soak in warm water for 5 minutes and drain completely before using in the recipe. Cook potatoes until lightly crisp and golden in colour.

How to make Spanish Omelette
Preparations
Rinse and peel potatoes . Slice potatoes uniformly into 3mm thickness . Cut sliced potatoes into 2 halves.
Chop onion , chillies , cilantro leaves , if adding and set aside.
Crack open 4 eggs , season with ½ teaspoon salt and pepper powder. Whisk well together and set aside .
To make Spanish Omelette
Heat 3 tablespoon of olive oil in a small 8.5 " inch diameter frying pan.
Add potataoes , spread in one layer and fry until lightly crisp and golden in colour. Takes around 8 to 10 minutes to cook on a medium heat.
When potataoes are completely cooked and lightly crisp ,
drain excess oil and transfer into a bowl.
Into the same pan , add onions and chilles .
Saute onions until it turns translucent. Pour eggs into the frying pan.
Add lightly crisp potatotes over the egg and spread evenly.
Sprinkle some finely chopped cilantro ( optional) . And season with remaining salt and pepper powder.
Cover with a lid and cook on medium heat until the base turns firm, takes about 6-8 minutes.
Open the lid and loosen the corners with help of a spatula. Shake the frying pan so that base loosens up and moves completely.
At this point, omelette will be still runny at centre of the pan . Cover the fry pan with a plate and upside down the frying pan.
Now slide back the runny side of the omlette onto the frying pan.
Now slide the uncooked side on to skillet and cook for 3 minutes on medium heat.
Gently press the omlette and cook for 1-2 minutes , until the base firms up.
When it's completely cooked on both the sides. Turn of the heat.
Transfer into a plate and finally garnish with chopped cilantro , cut it into wedges and serve hot .

- 1 or 2 Red or green chillies , chopped , optional
- 2 tablespoon Fresh Coriander leaves chopped
