Tahini also popularly known as tahini or tanina paste is Middle Eastern sauce made from sesame seeds and oil . Tahini paste is staple in Mediterranean cuisine and is used to make tahini sauce for dressing salads , falafel, baba ganoush , hummus and as spread for pita bread and sandwich or even used as dip.
Going ahead further Tahini sauce is also used in cookies , cake and popsicle recipes.
Tahini can be made either thick or thin , it's up to you ! No matter how you make, you end with a creamy and luscious result.
Tahini is a vegan and gluten-free paste , also its a secret ingredient for hummus which makes hummus and baba ganoush , creamy and super delicious .

Ingredients
Just 2 ingredients , nothing more and super tasty Thaini gets ready under 10 minutes from start to end.
Hulled Sesame seeds - As it the main ingredient to make Thaini , buy a good quality hulled sesame seeds . Depending on the color of the hulled sesame seeds , you get either a light or darker color Tahini . I always use a organic cream coloured sesame seeds instead of white sesame seeds (reffered as Nylon Til in India )
Olive Oil - A good quality extra virgin olive oil is all you need to make Thaini , creamy with a free flowing consistency. Again you can choose on the amount of olive oil that gets into make Thaini paste depending on the consistency required.
Optional Ingredient - Salt , I prefer to add pinch of salt , but its optional !

Use a good quality hulled white sesame seed to make a best ever easy homemade tahini recipe. Sesame seeds stored in pantry for longer time turns rancid and that would make your tahini sauce taste weird.

How to make Tahini at home?
It's mandatory to roast sesame seeds before grindding to make tahini. If you have brought tossed sesame seeds from stores , even then I recommend you to warm it up before adding into the processor.
Hint : Roasting / warming sesame seeds helps to release oil .
When sesame seeds are still hot, transfer it to a processor. Add salt, if using.
Blend for a minute, open lid and scrape the sides.
Add olive oil
and continue to process for 2 minutes until you get smooth pouring consistency tahini.
Tip : If you want more thin flowing tahini, you can consider to add extra tablespoon of olive oil and process it further.
Homemade Tahini paste will be ready and you can store in a clean glass jar .
Stays good in refrigerator up to 4 weeks.
