Goli Baje is a native of Mangalore , coastal region, Karnataka , India. Goli means " Round " and Baje means " Fritters" in regional language of Mangalore. These are also known as Mangalore Bajji or Maida bonda
Goli Baje are made with All purpose flours, curds and spices .Flour is mixed with sour curds, sugar , salt and cooking soda .Left for 2-3 hours to leaven and then spices are , batter is well beat to incorporate air and fried into fitters and served with coconut chutney.
Ingredients and Variations
All Purpose Flour - Refined flour/ Maida is the main ingredient to make this specialty fritters. Don't use wheat flour as it gives dense fritters. Instead as an alternative you can use less beached APF. You can even add 1 tablespoon of rice flour to APF but its optional.
Sour curds / Yogurt - works best for this recipe. Slightly sour curds works fine here. Alternatively you can also use buttermilk . Vegan's can use soya curd or cashew curds or peanut curds to make this fritters.
Spices and Herbs - Grated ginger, coriander leaves, curry leaves, cumin seeds , green chilies and coconut pieces are used.
Sugar, Salt and Cooking Soda : All these ingredients are added to flour along with curds . This helps has leavening agents and yields a fluffy and porous Goli Baje.
Tips
- If baking soda is not fresh, the goli baje won't be soft, so use fresh cooking soda , To test freshness of soda, mix soda with lemon/ vinegar water , if it frizz’s then it’s a fresh soda.
- Keep batter for 3 + hours helps to leaven the batter, which helps in soft and porous goli baje
- Beating batter with hands is a very important step , it helps to incorporate air which helps to turn goli baje , fluffy.
- To fry, drop batter from little height such that it takes round shape. Use either hands or spoon to drop batter .
- Fry on medium heat until golden on both sides.

Step by step directions to make Goli Baje
Add 1 cup All purpose flour, sugar , salt and cooking soda .
Mix well.
Now add in ⅓ cup sour curds and mix well with flour.
Take ¼ cup water and add water part by part to flour and mix well. Batter needs to be thick .
Now sprinkle 1 -2 tablespoon of water on top of batter , cover lid and let batter sit for 2 to 3 hours.
After 3 hours , add ginger, green chilies, curry leaves, coriander leaves and cumin seeds to batter.
Mix well everything and get your hands into batter.
Stretch thick batter with hands and throw it back into bowl. This is a method to beat batter and incorporate air. Constantly do this for 4-5 minutes. This beating process is really important to get a crispy and spongy fritters.
Heat oil for frying , drop batter from little height so that it turns round ,automatically.
Turn and fry goli baje until it turns golden color on all sides.
Remove fritters from oil , place on absorbent paper and serve hot/ warm with coconut chutney.

Ingredients
- 1 Cup APF / Refined flour / Maida
- ¼ teaspoon Cooking Soda
- ¼ teaspoon Sugar
- ½ teaspoon Salt
- ⅓ Cup Sour Curds - homemade preferred
- ¼ cup water or less - as required
- ½ teaspoon Ginger grated
- 1 teaspoon Cumin Seeds
- 1 tablespoon Curry leaves Chopped
- 1 tablespoon Coriander leaves. Chopped
- 1 Green chili - chopped
- Oil for frying
