Here the term Masala refers to the spicy gravy made with dry green peas . This chaat is served with crushed Puri , ladle full of spicy masala gravy and finally topped with titbits of assorted veggies and sev . This is one of the most popular and favourite chaat among young generations in the region.
Many stories are associated with this Chaat . It brings me so many memories of our college days, I feel nostalgic about this. Many small fights , make ups and challenges those days were for this 1 plate of Masala Puri , Pani Puri and Churmuri . LOL ....., it brings so much of funny , caring and lovable memories. Masala Puri Chaat
Ingredients
To Pressure Cook
- 1 cup Dry Peas , soaked for 7-8 hours
- 1 teaspoon Salt
- 2 no Potatoes, medium size
- 2 cups Water
For Masala Paste
- 2 teaspoon Oil
- 1 inch Cinnamon Stick
- 2 no Cloves
- ยฝ teaspoon Jeera / Cumin Seeds
- ยผ teaspoon Black peppercorns
- 1 no Marathi Moggu
- ยผ teaspoon Stone Flower
- ยฝ cup Onion , chopped
- 2-3 no Garlic cloves
- ยฝ inch Ginger
- 3 no Green chillies
- ยฝ teaspoon Red Chilli Powder
- ยฝ teaspoon Coriander Powder
- ยฝ tablespoon Mint Leaves
- 2 tablespoon Coriander Leaves
- ยฝ cup Soaked Dry Green peas , cooked
For Masala Gravy
- 2 tablespoon Oil
- ยผ teaspoon Turmeric Powder
- ยฝ teaspoon Red Chilli powder
- ยฝ teaspoon Dry Mango Powder / Amchur powder
- ยฝ teaspoon Chaat Powder
- 2 ยฝ-3 Cups Water
- 1 ยฝ -2 teaspoon Salt or as required
For Assembling
- 5-6 no's Puri , crushed
- ยพ cup Masala Gravy
- 2 tablespoon Tomatoes , chopped
- 2 tablespoon Onions , chopped
- 2 tablespoon Boiled Potatoes , mashed
- 1 Tbsp Carrot , grated
- ยฝ tablespoon Coriander Leaves
- 2 tablespoon Sev
- 1 pinch Garam masala powder
- 1 pinch Chaat masala
- 1 pinch salt
- Lime Juice , few drops
Instructions
- Pressure cook soaked dry green peas , 2 boiled potatoes , ยฝ teaspoon of salt with 2 cups of water for 3-4 whistles.
- Allow pressure to release on its own . Peel potato skin , mash and set it aside.
For Masala Paste
- Heat 2 teaspoon oil in a pan , add cinnamon stick , cloves, black peppercorns, cumin seeds , stone flower , Marathi moggu and saute well.
- Add ยฝ cup chopped onions, 2- 3 garlic cloves , ยฝ inch ginger , 3 green chillies and saute till , raw smell goes off.
- Now add in ยฝ teaspoon red chilli powder , coriander powder , mint leaves , coriander leaves and mix well.
- Turn off the stove /heat . Allow it to cool
- Transfer the sauteed masala into a blender and blend to a coarse paste.
- Add ยฝ cup of boiled green peas ,to this blended masala , add little water and blend to a very smooth paste.
For Masala Gravy
- Heat 1 tablespoon of Oil , add โ teaspoon of turmeric powder , ยฝ teaspoon of chilli powder .
- Instantly add the above ground paste and mix well.
- Add 1 ยฝ - 2 cups of water and bring it to boil.
- Now add in salt , ยฝ teaspoon of dry mango powder and chaat masala .
- Add in boiled green peas . Adjust water if needed , once it comes to boil ,keep it on simmer and set aside.
To Assemble
- Crush 5-6 puris , add 4 ladle full of hot masala gravy along with green peas.
- Top it with chopped tomatoes, grated carrots, chopped onions, boiled potatoes and coriander leaves.
- Sprinkle pinch of salt , chaat masala , garam masala powder.
- Add few drops of lime juice and top with some crispy sev and serve immediately.

Step by Step Directions for making Masala Puri Chaat
