    Mumbai Style Egg Bhurji Short Video and Recipe with stepwise pictures. Scrambled Egg with different blend of spices varies from region to region. Every part of the country and every home as their own versions of anda bhurji . This Mumbai Style Egg Bhurji is quite popular as a street food along with pav / bread toast across Mumbai.

    The main ingredient in this Egg Bhurji is the use of Pav Bhaji Masala. If you don't like the flavours of pav bhaji spices in your egg bhurji then replace it garam masala . Both the ways , this Mumbai Style Egg Bhurji tastes good.

    I'm very found of Egg Bhurji whether its a dhaba style or south indian masala egg bhurji or simple onion egg bhurji , I love to have it in any form. Egg being one of the most nutrient rich food and it is easily available at home . Hence reaching out for an egg for daily intake of protein is lot easier. Adding vegetables along with Egg will also delivers more nutrition in every bite. So , Beetroot Egg Bhurji and French beans Egg Bhurji are of such kind of recipes on my blog.

    Mumbai Style Egg Bhurji is scrambled egg with different spice blends. It is quite popular and served along with Pav / Bread Toast across streets of Mumbai.

    Equipment

    • Pan

    Ingredients 

    • 4 no's Eggs
    • 1 cup Onions, chopped
    • ¼ cup Capsicum , Chopped
    • ⅓ Cup Tomato ,Chopped
    • 1 teaspoon Ginger ,grated
    • 1 teaspoon Garlic, grated
    • 1 no Green Chilly ,chopped
    • ½ teaspoon Cumin Seeds`
    • ⅛ teaspoon Turmeric Powder
    • ½ teaspoon Red Chilly Powder
    • ½ teaspoon Coriander Powder
    • ¼ teaspoon Garam masala powder - , refer notes
    • ½ - 1 Tsp Pav Bhaji Masala - , refer notes
    • ½ teaspoon Black Pepper powder
    • 2-3 tablespoon Cooking Oil
    • 1 - 1 ½ teaspoon Salt or as required
    • 1 teaspoon Mint Leaves ,chopped
    • 1 tablespoon Coriander Leaves ,chopped

    Instructions

    • Heat oil in a pan , when it's hot enough ,add cumin seeds.
    • Once cumin seeds is about to change colour , add chopped ginger , garlic and green chillies.
    • Add chopped onions and saute well till it turns translucent.
    • Now add in finely chopped capsicum and saute for 3-4 minutes.
    • Add in chopped tomatoes and cook till it turns soft. To speed up the process of cooking tomatoes, add ½ teaspoon salt.
    • Add turmeric powder ,red chilli powder , coriander powder , garam masala or pav bhaji masala (refer notes) and mix well.
    • Break in 4- 5 eggs into the above cooked vegetables and gently mix .
    • Allow eggs to cook completely. Once its cooked ,scramble the eggs well to mix along with vegetables.
    • Now add ½ teaspoon of black pepper powder , ½ -¾ teaspoon of salt and mix well.
    • Garnish with mint and coriander leaves.
    • Serve it as a side dish along with Toasted Bread, Roti or Rice-Sambar.

    Notes

    • Using Garam masala is optional , you can totally skip garam masala and use 1 teaspoon of pav bhaji masala. 
    • Or If you don't have pav bhaji masala , then use ½ teaspoon of Garam Masala .

    Step by Step Directions for making of Mumbai Style Egg Bhurji:
