This Ragi Almond Cookies are just mildly sweet because I curated this recipe mainly for healthy snacking options in diabetics diet . If you wish it to be little more sweetner , you can add upto ½ cup of powdered jaggery instead of ⅓ cup . Also mild sweetness from almonds adds on to this cookies. So, be careful while adding powdered jaggery . You may also need to check the sweetness of powdered jaggery you are using to make this cookies.
As I'm from Mysore, Karnataka , India , I have grown up eating Ragi / finger millet since childhood . Ragi Roti, Ragi Mudde and Ragi ambli are like everday recipes at home. It's our staple food because it is one of the main crop in Karnataka .

Health Benefits of Ragi
Ragi aka Finger Millets are very rich in calcium and it supplies complex carbohydrates and high dietary fiber when compared to other grains like wheat, rice, maize or barley.
Ragi is powerhouse of nutrients and these tiny little cereals have lot to deliver when it comes to calcium and iron.
Finger millets / Nachni / Ragi is one of the most nutritious cereal. Ragi is very rich in calcium, in fact, no other cereal is even near to ragi with respect to calcium content. Regular consumption of finger millet is good for bone health. And keeps diseases such as osteoporosis at bay and could reduce risk of fracture.
Ragi is rich in polyphenols , these nutrients help control blood sugar levels and hyperglycemic tendency found in diabetics. Hence Ragi is considered has a wonder grain for diabetics.
It is also rich in fiber and has lower glycemic response , hence helps in controlling blood sugar levels. It also battles anaemia, reduces the risk of stroke, boosts lactation, increases bone strength, helps in digestion, reduces cholesterol and makes excellent food for baby . Ragi is also gluten free and hence good for people who are allergic to gluten.
This super grain has umpteen benefits when comes to health , so start adding to your diet. Also if you are suffering from sleep disorders and mood swings , this super grain helps you to overcome this. Ragi contains essential amino acid known as Tryptophan , which goes into making serotonin .
What is Serotonin ? This a chemical in the brain that can affect mood and sleep. Eating foods that contain the essential amino acid tryptophan can help the body to produce more serotonin. Tryptophan, which goes into making serotonin, is commonly found in foods that contains protein and humble ragi falls into this category. Hence its called a super food as this tiny grains is no less than a wonder grain.
Ingredients , Tips and Variations
Flour : I have used only Ragi flour in this recipe ,if you wish you can also add oats meal and wheat flour combination along with Ragi Flour.
Dry Nuts : You can add cashew / walnut along with almond meal.
Sweetner : Organic Jaggery is used in this recipe , You can add either sugar or coconut sugar for variation. These cookie are mildly sweetned , can add more sweetner if required.
Milk : Depending on quality of flour , incase dough is dry and becomes difficult to bind , then you may need to add 2-3 tablespoon of milk to make dough and roll into cookie . As I always use homemade Ragi flour , fats from almond flour and butter was enough to bind dough and shape into cookies.
Toppings : Can top with choc chips and desired dry fruits and nuts on cookies while baking.

How to make Ragi Almond Cookies
In a pan , dry roast ragi flour on medium heat for 4 to 5 minutes. Allow it to cool down completely.
Add ⅓ cup of almonds in a blender and ground to fine powder to get about ¾ cup of almond meal. Set aside till use.
In a mixing bowl , add ½ cup softened butter and ⅓ cup ( can add upto ½Cup) of powdered jaggery and beat well till smooth and creamy.
Now add roasted ragi flour , almond meal , baking powder , salt and cardamom powder .
Rub with hands to get bread crumbs texture and then mix well well everything to form cookie dough. In case if its too dry and can’t bind into dough , then you can add 2-3 tablespoon of milk.
Mix well everything, cover with a cling wrap and refrigerate for 20 minutes or more.
Whilist preheat oven to 180 deg Celsius , prepare cookie tray and set aside.
After 30 minutes, scoop around 1.5 tablespoon of cookie dough , shape into cookies and arrange on a tray.
Bake for about 15-18 minutes at 180 deg Celsius in oven.
Transfer cookies on to wire rack , allow it to cool completely.
When cookies cools down completely , store in an air tight jars and use a required.

Can I use oil instead of butter?

Hi Shilpa ,
Yes, you can use oil but the texture of cookies changes and it will be more flattened. Cookies may turn slightly harder and more crisp when you use oil . For every 1/2 cup of butter you may need to use 1/3 cup of oil . Though any oil works in this recipe , coconut oil is much prefered here as it solidifies and you may able to cream it with jaggery. Creaming is done to create air pockets which helps to get right texture in baked goods.

The recipe is very nice. Just that the base of my cookies is getting almost burnt in 12 mins at 150 degrees. This is already much lower than what your recipe calls for. Pls suggest.

Hey Pooja , Sorry to hear . Please check your oven temperature , most of the times oven temperature changes from brand to brand. Are you baking in a Oven or a OTG ? Also please check on the amount of fat in your butter and almonds. Another factor to consider is don't use almonds stored in refrigerator while making into a powder .
