How to make Lamingtons?
Making Lamingtons is simple ,
- make a buttery vanilla cake
- cut into squares, dip into chocolate icing, coat with desiccated coconut.
The butter cake in the recipe is perfectly moist and tender . The rich chocolate coating is thick enough to get a great hit of chocolate, but thin enough so that it soaks into the sponge and is sticky enough to glue on plenty of coconut.
Following this recipe will yield you perfect Lamingtons. Butter Cake should not be too spongy , but should be airy and light. Few uses sponge cake also to make lamingtons but I dont prefer sponge cakes as it will too soft and when coated with chocolate it will soak in moisture from chocolate andthe results may not be the same as when used butter cake.
So I always recommend on using Butter Cake over Sponge cake.
Pro Tips and Variations:
- Base Cake : Butter or Sponge Cake can be used . But , I always recommend Butter cake, as it holds texture even after dipping in chocolate Icing.
- Chocolate Icing : Though simple choclate icing with coca powder , butter, powdered sugar and water can be made, I recommed to follow the recipe as it yields a rich and delciious chocolate icing .
- Sandwiching : A common variation has a layer of cream or strawberry jam between two lamington halves . But its believed that tradtional Lamingtons doesnt have any Cream or jam layered in between.
- Freeze cake before rolling in icing. A firm, semi frozen piece of cake is much easier to handle when coating in icing and rolling in coconut.
PS : I didnt freeze the cake and was messy dipping in chocolate icing and then rolling with coconut.

Step by step directions
For Butter Cake
Preheat the oven to 175°C. Grease and line a 20cm-square cake pan.
Sieve all purpose flour, 2 teaspoon of baking powder and ⅛ teaspoon of salt all together and set aside.
Process butter and sugar in for 2 minutes until light on a medium speed.
Add 3 eggs one at a time, pulsing after each until just combined.
Whip on medium speed until smooth and creamy.
Add 1.5 teaspoon of vanilla extract and whip to combine.
In 3 alternating batches, add sieved flour and milk, pulse on low speed just to combine.
After adding 3rd batch flour and milk, combine everything with a spatula in cut and fold method. This step helps to get a proper butter cake without being too spongy.
Pour cake batter into pan
and bake for 55-60 minutes until a skewer inserted in centre comes out clean.
Cool for 5 minutes, then turn onto a rack to cool completely.
For Chocolate Icing
Meanwhile, stir dark and milk chocolate, cream
and remaining vanilla in a heatproof bowl over simmering water until smooth (don't let the bowl touch water).
Chill for 20 minutes to thicken.
Making Lamingtons
When butter cake is cool down completely.
Cut into squares or desired size cakes pieces.
Dip the cake into chocolate , spread this icing over the cake with help of a fork.
Then roll / sprinkle chocolate glazed butter cake with desiccated coconut.
Let it set for 15-20 minutes , before serving .

- 2 teaspoon Vanilla Extract
