About this recipe
Initially it used to happen that while adding Mayo in any of the recipes , my hands automatically draws back the actual amount of Mayo and end up adding less. That is because of the calories Mayonnaise carries. But after coming up with this recipe there is no cutting back on Mayo , I generously add on my salad dressing , sandwich spreads and dips.

Ingredients
With just 5 main ingredients , you can mock a perfect , vegan , budget friendly best mayonnaise recipe. For actual recipe measurements refer recipe card
Tofu – For a thicker spreadable mayo use firm tofu . For a thinner mayo use silken tofu as it gives the mayo its body and silkiness with a neutral flavor so you can build on the flavor with the spices.
Cashews - For sure you need some creaminess for which use about 2 tablespoon of whole cashews.
Sunflower oil or any neutral flavor Oil - Let me be honest here mayo is all about that perfect fatty rich emulsion. But as I'm opting for a low fat version , I'm using a neutral flavor oil along with some cashews.
Dijon mustard – for a little tang, it’s what gives mayonnaise that classic taste but without overpowering everything else.
Apple cider vinegar or lemon – acidity is very important to balance out the richness of the mayo and wake up the taste buds.
Sugar , Salt and ice cubes as required.
Variations
This post shares thick spreadable mayonnaise recipe but incase if you like to make thin mayonnaise then add silken tofu in place of firm tofu .
Also add 2 extra tablespoon of oil to make to more shiny , gorgeous looking Mayo.
Incase you are very strict on low fat version , then add few extra ice cubes while blending so that you get creamy thin mayo without increasing on calories.
Top Tip : Prefer to keep Mayo on thicker side without adding much water or oil . Depending on the recipe you are creating, take required amount of mayo from glass jar and thin out with ice water and 1 tablespoon of oil .

How to make Vegan Mayonnaise
Into a blender , add tofu ( firm or silken) , add cashews , Dijon mustard , oil, salt, sugar and ice cubes.
Blend until everything comes together. Add another 2-3 ice cubes and continue to blend , until it is smooth and creamy.
You can taste and adjust salt or sugar accordingly. Also feel free to add 1 - 2 tablespoon of oil or ice cubes , if you feel mayonnaise is little thick.
Blend until mayo is shiny and smooth . Transfer to a tight glass jar and refrigerate . Stays good up to 10 days.
Notes : Prefer to keep vegan mayonnaise on thicker side without adding much water or oil. Later depending on the recipe you are creating, take required amount of mayo from glass jar and thin out with ice water and 1 tablespoon of oil .
I always keep Mayo thick to spread on sandwiches where as in my salad dressing , I thin out using ice water and 1 tablespoon of oil.

Vegan Mayonnaise Recipe
Ingredients
- 200 grams firm tofu for thick mayo - use silken tofu for thin mayo
- 2 tablespoon cashews - skip for thin Mayo
- 2 tablespoon sunflower oil
- 1.5 teaspoon Dijon mustard
- 1 tablespoon Apple cider vinegar
- 6-8 tablespoon ice cold water
- 1 teaspoon cane sugar
- ½ teaspoon salt
Instructions
