So this recipe can be a quick breakfast recipe or can even be served to kids as after school snacking . Also an healthy evening snack option for weight loss and weight management.

Corn flakes are very rich in thiamine. Thiamine is good for carbohydrate metabolism, energy production and cognitive functions. It is also rich in iron content, which maintains healthy blood levels and keeps the brain alert. As cornflakes are nutritious and also low in fat , adding in breakfast is a smart choice. Also you can serve to kids and elderly people for evening snacks , as it can be a healthy snacking option.
Cornflakes actualy becomes a easier option for morning breakfasts for kids, working women and bachelor's. Though I'm not okay with any kind of ready to eat breakfasts , conflakes do comes handy and easier for me at times when i'm lazy or not well. Pro tips and Variations
- Vegetables : Here in this recipe I have just used basic seasionig along with onions and tomatoes for vegetables. You can add more vegtables to suit your preferances . Carrot , green peas , french beans , cabbage and even some sprouts can be added in this recipe .
- Water : Adding water is most crucial and important in this recipe. For every 1 cup cornflakes you may need to sprinkle about 3 to 4 tablespoon of water. Adding more water may make cornflakes soggy and adding too little will make it chewy. So you may need to just add it right. Alternatively you can also rinse cornflakes for 30 seconds and use in this recipe.
Step by step directions to make Cornflakes Upma
Heat 1.5 tablespoon of oil in a pan . Add seasoning ingredients mustard seeds and cumin seeds. When mustard seeds starts to splutter , add chana dal, urad dal and chopped curry leaves. Fry on a medium flame until lentils changes colour to lightly golden .
Now add in chopped green chillies , grated ginger , chopped onions , turmeric powder and asfoetida.
Mix well everything and saute until onion turns translucent.
Add in chopped tomatoes ,
Mix well and continue to cook until it turns pulpy.
Add 3 cups of cornflakes and mix well.
Sprinkle salt and spices to taste , mix well together.
Now add ¼ cup to ⅓ cup of water and gently mix everything.
Cover lid and cook on low flame for about 3 to 5 minutes . By now water would have absorbed by Cornflakes and with enough moisture it will be soft not being soggy or chewy . If you find cornflakes as chewy , then sprinkle 1or 2 tablespoon of extra 2 water and gently stir and cook for a minute.
Turn off the stove. Tip in chopped coriander leaves and squeeze fresh lime juice.
Mix well everything and serve hot immediately .

- ½ teaspoon red chilli powder

- Salt to taste
- ⅓ cup water
- 2 tablespoon chopped coriander leaves
- 1-2 teaspoon lime juice
