I made this peanut butter cookies with home made peanut butter , which tasted really rustic with full of peanut flavor.

Ingredients
The crumbly, melt-in-mouth peanut butter cookies totally delighted me and has traditional ingredients like flour, baking powder, and baking soda. Along with it , here’s what other ingredients get into these cookies
- Peanut butter , for the best results always use creamy peanut butter as crunchy peanut butter doesn't give you the same results.
- Ground flaxseed – Instead of egg , I have used flax eggs as a binder.
- Brown sugar and cane sugar – This combination creates the perfect complex, look and sweet flavor.
- Butter – Make sure your butter is softened, but not melted. It should have a creamy appearance and should mix seamlessly .
- Vanilla extract – Just a splash is enough to add depth of flavors to these cookies.
- And salt – A pinch of salt in in these peanut butter cookies really makes the flavor pop.
Variations
For Vegan - Swap butter with coconut oil .
You can fold in some Choco chips or dry fruits and nuts into cookie dough , to make Choco chip peanut cookies.
Top Tips
- Use creamy peanut butter- If your peanut butter is too dry, the dough may crack, and it will be difficult to form cookies. Tip: If you store your peanut butter in the fridge, allow it to come to room temperature for an hour before making this recipe.
- Chill the dough! It may be tempting to skip this step, but chilled dough really makes the best peanut butter cookies. Chilling prevents cookies from over spreading as they bake.
- Leave them on the baking sheet for a few minutes to cool. Like many other cookies even these peanut butter cookies require a few minutes to set hard once they’re out of the oven. Before transferring them to a wire rack to cool completely leave them on the baking sheet for 5 more minutes to firm up.

Why did my cookie spread and couldn't make out designs on cookies ?
Oh , sad to hear ! Next time , you increase chilling time for dough , 1 hour or more is good enough to give a nice textured peanut butter cookies.
Can I use eggs instead flax eggs ?
Yes of course , Eggs and flax eggs can be used alternatively in this recipe.
Can I make it with APF?
Sure , just swap whole wheat flour with APF/refined flour.

How to make Peanut Butter Cookies
Into a bowl add 1 tablespoon flaxseed meal and 3 tablespoon of water ; whisk well together and set aside undisturbed for 15 minutes.
After 15 minutes , it looks thick and gelatinous , hence it’s called flax egg.
Into a mixing bowl , add butter , cane sugar , palm sugar . With a hand blender / electric blender , whisk until sugar and butter is well incorporated.
To this add peanut butter, vanilla essence, flax egg and continue to blend everything together till creamy.
Place a flour sifter above the mixing bowl ; add flour , baking powder , cooking soda, salt and sift everything together directly onto a mixing bowl.
With spatula, mix everything together to form a thick and stiff dough.
Cover bowl with a cling film and refrigerate it for 30-60 minutes.
After 30 minutes , takeout the bowl from refrigerator and remove cling film.
Scoop 1 tablespoon of cookie dough and shape into balls and gently press to give a round shape.
Arrange on a lined baking tray and make design or any impressions from fork .
Preheat oven to 180 deg Celsius ; place the baking tray inside the oven and bake for 16-18 minutes.
Once baked , cool the cookies on wired rack.
Let cookies cool down completely , store in a air tight snack jar.
Serve it as a snack or with hot cup of tea.
